Herbs are not only one of our greatest gifts from mother earth, but they are also healers themselves. In this class we’ll focus on easy to use and accessible household herbs that have transformative healing powers. Working with flowers and herbs like Peppermint, Basil, Thyme, Sage, Chamomile and Calendula fresh from the farm, as well as ginger, turmeric, nutmeg and coriander. We’ll dive into their medicinal properties and learn how to harvest, dry and store them.
Once we have collected our bundles of herbs Nicole will show us how to incorporate them into infusions, concoctions, tinctures, syrups, topical balms and even infused baths. She’ll share tips and remedies concerning our digestive, respiratory and nervous systems. These plants provide pathways to body-mind wholeness and can be used for anything from relaxation and stress relief, to grounding, sleep aide, improving circulation and soothing aches and pains.
As a herbalist, chef and Reiki practitioner, Nicole will offer insights on how to combine these plants with our meditative practices and attempts to bring about elevated state of awareness. You’ll apply this knowledge to create unique blends based on your individual intentions and begin to access the magic living in the leaves.
Each of the class participants will go home with a tea blend, tincture and ritual bath mix. In an effort to always be sustainable. we are asking each attendee to bring up-cycled containers for the 3 different creations. It could be something as simple as a paper or cloth bag for the tea and any used jar for the salt and tincture (honey, face products, etc). Try to stick to smaller jars 6-8oz, though any vessel will work. We will provide the droppers and all other materials.
Nicole is a culinary conceptualist, healing chef, herbalist, food stylist, photographer and artistic fairy in the city that never sleeps. She grew up on a farm in a town called Stadecken, outside of Mainz, Germany, which is where her passion for farm-to-table cooking and the arts comes from. She spent most of her childhood learning how to make preserves from leftover fruit in her grandparents’ orchards.
Nicole has been running her own catering business in New York City since 2014. Initially, the majority of her clients came from the fashion industry, including Marc Jacobs, Tommy Hilfiger and Vera Wang to Rag & Bone, Michael Kors, Derek Lam, and many more. Recently, Nicole has expanded into the wellness industry, partnering with clients like: Alo Yoga, Athleta, Adidas and Bandier. As a healing chef, Nicole believes we are truly a reflection of what we eat. Her intention is to elevate the collective energetic vibration and to empower through aligning mind, body and soul.
She is also the Co- Founder of HINT OF GREENS™ along with Lauren Courtney Unger, a cannabis-driven wellness brand that teaches healing through plant-based medicine. Nicole serves as the creative director
